Drop by SF’s newest and best craft spirits store, The Epicurean Trader, for an opportunity to meet the founders of San Francisco’s very own Seven Stills who create an amazing range of whiskies distilled from local craft beers!


There will be an opportunity to meet and engage with the distillers, learn more about their distilling process, and – of course – sample their delicious products.


Products that will be available to taste include:




Whipnose: Whiskey Made from a Double IPA
Whipnose was the first whiskey in their Collaboration Series, with Pacific Brewing Laboratory.  This whiskey is made from Pac Brew Lab’s double IPA and opens with huge whips of west coast hops: Simcoe, Cascade and Centennial.  The whiskey drinks like a concentrated IPA, without any of the hop bitterness, and finishes with sweet maple sugar. 


Fluxuate: Whiskey Made from a Coffee Porter


Fluxuate is the second whiskey in the SF Hills Series.  This whiskey is distilled from a coffee porter with Flux Cold Brewed Coffee.  The whiskey opens up with huge aromas of coffee and vanilla.  The palate is medium full to thick and has a slick mouthfeel.  Since this whiskey is brewed with coffee and uses a high proportion of roasted malts Fluxuate both opens and finishes with dark, rich roasted flavors. 




Chocosmoke:  Whiskey Made from a Chocolate Stout


Chocasmoke is made from a chocolate oatmeal stout with peat smoked malted barley.  It opens with huge bursts of chocolate and dark, malty aromas.  It is smooth, and sweet throughout, and finishes with a subtle hint of peat and smoke.

Seven Stills of San Francisco


Seven Stills was founded by Tim Obert and Clint Potter in January of 2013.  While having drinks at Dobbs Ferry in early 2012 Clint explained to Tim the process of distillation and how whiskey is traditionally made from a low quality beer.  Tim, an avid homebrewer thought, “Why don’t we buy a still and see what happens if we distill my homebrews”?  


They spent the next year creating over 30 different whiskeys before deciding that the results were so incredible that we needed to start a company specializing in whiskeys made from craft beers. 


The Epicurean Trader


The Epicurean Trader is dedicated entirely to craft products: craft spirits; organic and sustainable wines; farmstead cheeses and charcuterie; small batch chocolates, coffees, teas and pantry items.





We hand select artisan products from across America for their dedication to the craft, their incredible flavors and fusions, natural ingredients and beautiful packaging. 


Our goal is to be a brand ambassador for these smaller brands, sharing their unique stories, and bringing many of them to San Francisco for the first time.
