Their story
Apologue was founded in Chicago's Pilsen neighborhood in 2017 by Robert Haynes and Jordan Tepper. Haynes's years behind the bar shaped the idea: use spirits to draw out the true flavor of a single ingredient.
They started with overlooked Midwestern plants like aronia berries and persimmon, and now also source rarer ingredients such as saffron from farms abroad. The range includes aronia, persimmon, celery root, saffron, paw paw and carrot root liqueurs.
How it's made
Apologue buys from local growers when it can and uses traditional, natural methods to make its liqueurs. The brand is Non-GMO Project verified and a Certified B Corporation.

Why we carry them
We like Apologue for bartenders and home mixers who want a new flavor to play with. The celery root is a great twist in a gin cocktail.
