Their story

Dark Matter Coffee is the creation of Jesse Diaz, who built it into one of Chicago's most recognizable roasters. It started with Star Lounge, a cafe in Humboldt Park, and in 2014 opened the Mothership, a roastery and cafe on Western Avenue.

The brand is known as much for its look as its coffee. Its spaces are covered in work by local artists, with stage-set curtains and a gold and red roaster that gives the Mothership a boiler-room feel.

Dark Matter now runs several cafes around the city and roasts for dozens of wholesale partners.

How it's made

Dark Matter buys directly from growers, mostly in Latin America, and pays close attention to coffee genetics, fermentation and processing. Beans are roasted on large Steinmetz roasters at the Mothership, and the lineup rotates between blends and single-origin lots.

We've gotta' make the outside look as crazy and as fun as what we put into the inside.

Why we carry them

We like Dark Matter for coffee drinkers who want something with personality, inside the bag and on the label.
