Their story

Gemma Salumi is a family-owned salumeria in Milford, Connecticut, co-founded by Don Carlo Battimelli. The company works under a simple motto, Craft Over Convenience.

It makes Italian-style salami as whole chubs and deli pieces, and in 2026 it launched a pre-sliced 4-ounce line nationally for shoppers who want craft salumi in an easier format.

How it's made

Gemma uses whole-muscle Heritage Duroc pork, slow fermentation and traditional aging in small batches. Ingredient lists are short, with no fillers, synthetic additives or added nitrates or nitrites, and the salumi is gluten-free and dairy-free.

Consumers want authenticity, but they also want transparency

Why we carry them

We like Gemma for a clean, well-made salami that shows what American craft salumi can be. It is an easy anchor for any cheese board.
