Their story
Alvarado Street Brewery opened in 2014 as a brewpub in downtown Monterey, started by John Hill and his son J.C. Hill. J.C. studied hospitality, ran a craft beer sandwich shop and co-owned a small brewery in San Diego before coming home to the Central Coast to run the brewing side.
The brewery made its name with hazy IPAs, beginning with Contains No Juice, and also brews West Coast IPAs, lagers and fruited sours. Its barrel-aged wild beers go out under a sister label, Yeast of Eden.
How it's made
The team builds each beer backward from the aroma it wants, then picks hops to match. Hazy IPAs are fermented with a blend of yeast strains for extra fruitiness, lagers rest in horizontal lagering tanks, and kettle sours are soured quickly with a probiotic culture before boiling.
