Their story
Cotswolds Distillery sits in the village of Stourton, near Shipston-on-Stour, in the rolling Cotswolds of England. Entrepreneur Daniel Szor founded it in 2014 with the goal of making single malt whisky in a region with no distilling tradition.
Alongside the flagship Cotswolds Signature whisky, the distillery makes a range of gins and liqueurs. Crowdfunding rounds helped it expand, and in 2023 the London wine merchant Berry Bros. & Rudd took a minority stake.
How it's made
Everything is distilled on site in copper pot stills. The whisky gets long fermentations and double distillation, then matures mostly in ex-bourbon and shaved, toasted and re-charred red wine casks. The gins are made in separate stills with juniper, coriander and botanicals inspired by the local countryside.
