Their story
Endless West is a San Francisco company led by co-founder and CEO Alec Lee, with a lab in the Bay Area. It began by trying to recreate wine at the molecular level under the name Ava Winery, then turned to spirits when its wine did not meet federal rules for what counts as wine.
Its best-known product is Glyph, a whiskey-style spirit offered in original, Scotch-inspired and bourbon-inspired versions. After raising $60 million in new funding, bringing its total to about $95 million, the company launched Blank Collective to offer its process and product development services to other brands.
How it's made
Instead of aging spirit in barrels, Endless West blends carbohydrates, sugars, proteins and flavor and aroma compounds to match the molecular makeup of an aged spirit. The approach skips years of aging and uses fewer resources than traditional production.
Why we carry them
We carry Endless West for the curious drinker who wants to see where spirits technology is headed. Try Glyph in a highball and decide for yourself.
