Their story
Fabriquero is a collection of traditional sotols from northern Mexico. Its Durango bottling is made by Don Héctor Jiménez in the village of Ventanas, at a vinata near the house where he grew up.
The site has produced sotol for more than a century. After it sat unused for a time, Don Héctor and his son Gamaliel brought it back to life.
How it's made
Only mature Dasylirion wheeleri, the desert spoon plant, is harvested. The hearts are cooked for three days in an underground oven lined with lava rock, crushed by hand and fermented with wild yeast in concrete tanks. The spirit is then double distilled in a small copper alembic.
Why we carry them
If you like mezcal, sotol is a fun next step, and Fabriquero is a great introduction. Expect something earthy, green and a little wild.
