Their story

High West Distillery was founded in 2006 by David and Jane Perkins. David, a biochemist, got the idea on a 2001 tour of Maker's Mark in Kentucky, and the couple moved from California to Park City, Utah, to make it happen. It became the first legal distillery in Utah since Prohibition.

The original distillery, in a 1907 building at the foot of a Park City ski run, is now the High West Saloon. Most production has moved to a larger distillery at Blue Sky Ranch in Wanship. High West is now owned by Constellation Brands.

How it's made

Much of High West's range is built by blending whiskeys sourced from other distilleries with its own, an approach the company is open about. The team takes cues from Scotch blending and uses barrel finishes, such as port casks for A Midwinter Night's Dram. Grain is sourced locally where possible, and spent grain goes to an anaerobic digester.

Why we carry them

We like High West for its blends, which reward a side-by-side tasting. Rendezvous Rye is a great place to start, and Campfire is fun for the curious.
