Their story

Sante Adairius Rustic Ales opened in 2012 in an industrial warehouse in Capitola, a few blocks from the Pacific. It was started by Tim Clifford and his wife, Adair Paterno, and it quickly built a devoted following among Bay Area beer lovers.

In late 2022 the brewery announced that Clifford was leaving the business. Adair Paterno is now its sole owner.

How it's made

The brewery works in a rustic Belgian tradition, leaning on Belgian yeast and wild fermentation, and applies that farmhouse approach to American styles too. Barrels began as a way to add capacity when the brewery had a single fermentor; today they are used mostly to pick up house cultures, with short stays meant to add funk rather than wood flavor.

Our beers are rustic. They're angular, they're edgy.
Tim Clifford, co-founder, to BeerAdvocate (2014)

Why we carry them

These are some of the most sought-after farmhouse ales on the Central Coast, and we are glad to have them close to home. Open one with a cheese board.
