Seven Stills Brewery & Distillery - 'Saison Dolores' Whiskey (375ML)
Seven Stills Saison Dolores Whiskey is a collaboration with Almanac Beer Co (another of our awesome local Bayview producers). They take Almanac's Saison and distill it, then age it in barrels for 8 months before release. The nose is rich with marzipan and citrus. On the palate are notes of pine, whiskey soaked cherries, and a hint of vanilla on the finish.
Tasting Notes:
Nose: A unique combination of light fruitiness, malt, and spice. Aromas of citrus, honey, floral notes, and a touch of earthy grain, with hints of caramel and oak.
Taste: Smooth and balanced, with flavors of honey, toasted malt, citrus zest, and a light spiciness. The whiskey has a subtle sweetness and a touch of vanilla, with some herbal notes and a gentle oakiness.
Finish: Medium finish with lingering malt sweetness, a hint of spice, and a touch of citrus. The finish is clean, slightly dry, and pleasantly warming.
