Modern Ancient Grains Project - 'Bolita Amarillo & Tehachapi' Heirloom Corn Whiskey (750ML)
MASHBILL
80% - BOLITA AMARILLO ancient heirloom corn grown the hard/healthy way by Juan Velasco Meza and family in Oaxaca’s central valley, represented and imported by Masienda
20% - TEHACHAPI RYE + WHEAT field blend grown by Tehachapi Grains Project—an extension of the acclaimed Weiser Family Farms—a regenerative heirloom grain oasis stewarded with respect in the desert north of Los Angeles
FERMENTATION
8 day ferment with Sand Reckoner vineyard ambient yeast. Relatively high brix at 22 because this gorgeous yellow/orange corn has a lot to offer. Heirloom Corns in general range from 17-22 brix; this one is on the higher side.
DISTILLING
This was distilled slowly in a 300 gallon copper pot still in Santa Ana California, the rye spice peaking out very clearly toward the end of the hearts run. The amazing florality and deep earthiness of these grains came through in such a way that we knew this whiskey needed to be released sooner than later; we don’t bottle based solely on numbers/age statements, we bottle according to taste and concept.
AGING
As usual, we chose a USED American Oak Cask so that the flavor of whiskey comes from heirloom grains, not the sweet and spice flavors added by NEW oak. This 55+ gallon cask was made in Napa CA by Seguin Moreau. We let this very tightly distilled whiskey age in it for eight months then we decanted it into glass where it rested for over a year as to further integrate and mature without oak influence.
FLAVORS
Delicious balance of sweet and umami, clean, mineral forward, fresh fruit tones; a very popular pour for any palate from wine to whiskey lover; a fan favorite.
