Their story
Algae Cooking Club was started by Kasra Saidi, who built the company at the New York venture studio Squared Circles. It launched its first algae cooking oil in early 2024.
The idea is that algae makes a better fat for the kitchen, since fat carries flavor. Chef Daniel Humm of Eleven Madison Park cooks with the oil and joined the company as its club culinary officer.
How it's made
The oil comes from microalgae, single-celled organisms grown in tanks rather than the ocean. They are fermented over about three days, much like brewing beer, then the oil is shipped to the U.S. and bottled. It has a smoke point of about 535°F.
Our featured pick
Shiitake Mushroom Oil (7OZ)
$17.00
Crafted with Chef Daniel Humm of Eleven Madison Park, this Shiitake Mushroom Oil delivers rich umami through a slow eight-hour infusion of six different spices.
Algae is a better fat platform. Fat is a carrier of flavor.
Why we carry them
We like having a neutral, high-heat oil on hand for searing and frying, and this one comes with a story unlike anything else on the shelf.
