Their story
Sal Ancestral comes from a salt spring in Navarre, in northern Spain, at the foot of the Urbasa and Andia mountains. The spring sits about 700 meters above sea level, well away from industry, and is worked by the small company Manantial Salado.
Millions of years ago this part of the pre-Pyrenees was covered by sea. Today the old seabed feeds a spring of very salty water, which is channeled into shallow salt pans and harvested in the traditional way.
The range includes salt flakes, flower of salt and a liquid salt spray for finishing dishes.
How it's made
The spring water carries around 240 grams of salt per liter and is evaporated in salt pans, then the crystals are gathered by hand. Nothing is added, and the salt keeps the natural minerals of the spring.
Our featured pick
Traditional Natural Spring Salt (11OZ)
$18.00
Formed by a natural process that requires the constant breeze of the north-easterly wind and the patient work of stirring the crystals in the bottom of the salt pans.
Why we carry them
We like the flakes for finishing: a pinch over tomatoes, grilled meat or chocolate goes a long way. The spray is a handy trick for salting salads and popcorn evenly.
