Their story
Alipús is a project of Destilería Los Danzantes, the mezcal house based in Santiago Matatlán, Oaxaca. Started in the late 1990s, it set out to give small campesino families a way to sell their mezcal under their own village names.
Each bottle comes from a single place, such as San Juan del Río, Santa Ana del Río, San Baltazar Guelavila, San Luis del Río or Sola de Vega, so the range reads like a map of the region.
How it's made
Most expressions use Espadín, with local varieties in some bottlings. Piñas are roasted in traditional earthen ovens, fermented in wooden tanks and distilled in small copper stills, while some Sola de Vega batches use clay pots.
Why we carry them
Tasting two Alipús bottles side by side is one of the clearest lessons we know in how much place matters to mezcal.
