American Craft Whiskey Distillery
Mendocino whiskey double distilled on an antique French cognac still.

- Redwood Valley, California
Their story
American Craft Whiskey Distillery works out of the old Germain-Robin brandy house in Redwood Valley, in Mendocino County. Crispin Cain, the founder and senior distiller, runs the stills, with his son Crispin Dylan Cain working alongside him as an apprentice.
Cain began making whiskey in 2010 under the Low Gap name, using the same antique French still that made Germain-Robin's brandies. In 2012 Low Gap was named Artisan Whiskey of the Year by Whisky Advocate.
The range includes a wheat whiskey and a bourbon, both made in small amounts.
How it's made
Mashes are fermented to dryness and double distilled on an old cognac still. The wheat whiskey uses hard wheat from Bavaria and ages in a mix of new and used oak, including Limousin, while the bourbon ages in new Missouri oak.
Why we carry them
We like how the cognac still shows up in the glass: these whiskeys are soft and fruity rather than hot. A good pick for brandy drinkers curious about American whiskey.
