Their story
The Cipriani name goes back to Venice, where Giuseppe Cipriani opened Harry's Bar in 1931 in a stone building on a canal near St. Mark's Square. He is credited with creating the Bellini there, naming the peach and sparkling wine drink after the painter Giovanni Bellini.
Four generations of the family have grown up around the restaurant, which Italy declared a national monument in 2001. The family business has since grown into hotels, restaurants and a line of foods for home cooks.
The food range includes the family's well-known egg pasta, a tomato and basil sauce called Sansovina, and Bellini products.
How it's made
Cipriani's egg pasta is rolled more than 30 times through a sheet machine designed by Arrigo Cipriani until it is about 0.6 mm thick. That thinness lets the dried pasta cook in just two to three minutes.
