Their story

Edmond Fallot works out of a mustard mill on a quiet street at the edge of Beaune, in the heart of Burgundy wine country. The company is owned by Marc Désarménien, Edmond Fallot's grandson, and describes itself as the last independent, family-owned mustard maker in the region using traditional methods.

The workshop has been making mustard since 1840. Visitors can tour the mill, where an old grinding wheel still stands in the courtyard as a reminder of how the work has always been done.

How it's made

Fallot grinds whole mustard seeds with stone wheels, a slower method that keeps the paste from heating up and losing its bite. Its Burgundy mustard uses seed grown in Burgundy and regional white wine, earning the moutarde de Bourgogne designation, while its Dijon style is made with vinegar.

This is a traditional process that we are still committed to using.

Why we carry them

We keep Fallot on hand because a good stone-ground mustard changes a vinaigrette or a ham sandwich. Start with the Burgundy mustard if you have never tried it.
