Their story

Conservas Ortiz began in 1891 in Ondarroa, a fishing town on the Basque coast, when Bernardo Ortiz de Zárate started preparing white tuna in escabeche. After his death his wife Petra kept the business going, and it continued under the name Viuda de Ortiz e hijo.

The family has run it ever since. In 1942 José Ortiz and his son José Antonio set up the company that became Conservas Ortiz in 1956, and the fifth generation is in charge today. Anchovies became a signature product in the early 1900s, after Italian immigrants brought their salting methods to the Cantabrian coast.

How it's made

Ortiz buys only tuna from the northern Spanish coast that is caught by line, one fish at a time, with the fishing season following the tides. The fish is handled carefully and packed by hand, and the anchovies are cured using the traditional salting method before going into tins and jars.

Why we carry them

We think Ortiz anchovies and bonito are the easiest way to turn bread, butter or a simple salad into a meal. They are a pantry staple we come back to.
