Their story
Quince & Apple was founded in Madison, Wisconsin, in 2009 by Matt and Clare Stoner Fehsenfeld. They got started in a small leased kitchen at Potter's Crackers, making preserves meant to sit alongside good cheese.
The company grew into a well-known name in Wisconsin food circles. The founders later sold it to Courtney McCarty, a Madison business owner who also runs Nitro Beverage Lounge, and production has stayed in Madison.
How it's made
Preserves are still made by hand on Madison's east side, in batches of no more than 250 jars. The kitchen buys from Wisconsin growers when it can, such as Door County cherries and Dane County apples.
