Their story
Wise Sons is a San Francisco Jewish delicatessen started by Evan Bloom and Leo Beckerman, two UC Berkeley graduates who had cooked together for big crowds at Berkeley Hillel and made their own pastrami at home.
In January 2011 they launched as a Saturday pop-up inside a Valencia Street cafe in the Mission, with a short menu that changed every week: matzo ball soup, blintzes, house-made bialys, chocolate babka and pastrami sandwiches. Bloom quit his full-time job to do it.
The pop-up grew into a full deli and bakery operation that has become a fixture of the city's food scene.
How it's made
From the start, Wise Sons has cured and smoked its own meats, including pastrami and corned beef, rather than buying them in. Baked goods such as bialys, babka and black-and-white cookies are made in-house from traditional deli recipes.
