Their story
Rob Tod got into beer washing kegs at a Vermont brewery, then started Allagash in 1995 in a corner of a warehouse on the edge of Portland, Maine. His first beer, Allagash White, was modeled on the Belgian witbiers he admired and won gold at the 1998 World Beer Cup.
The brewery has stayed devoted to Belgian traditions. After a 2007 trip to Belgium, Tod built a coolship and made the first spontaneously fermented lambic-style beer brewed in the U.S., and employees who reach five years still get a trip to Belgium.
How it's made
Allagash White is brewed with oats, malted and raw wheat, and spiced with coriander and Curaçao orange peel. Wild ales are cooled overnight in an open coolship and aged in barrels for years. The brewery has also committed to Maine-grown grain, using more than a million pounds a year.
